Usually people only write reviews when they have a really bad experience or a really good one. For me, taking classes with Valerian was such a good experience that I genuinely wanted to share it with others. I took my first roasting class with Valerian when I knew absolutely nothing about coffee. I came in as a blank paper, and today I have my own roasting business. I feel incredibly lucky to have learned from one of the best. Valerian is incredibly patient, never makes you feel dumb for asking questions, and somehow explains coffee in a way that just clicks. Things that felt intimidating at first became fun and exciting to learn about. I later came back to take the Q Grader course with him for the new CVA exams. I’ve heard so many people say the Q Grader is extremely difficult and stressful, so I was honestly nervous going into it. But Valerian made the whole experience surprisingly enjoyable and memorable. The course was organized so well, and every lesson built naturally into the next. Instead of feeling overwhelmed, I actually found myself really enjoying the process. I recently completed the new version of the Q Grader course by the Specialty Coffee Association, and it was an unforgettable experience. Before taking this course, I practiced cupping and Le Nez du Café at home, but during the course I learned how to evaluate coffee much more precisely and systematically. Triangulation was especially challenging for me at first 😱 but through the guidance and patient instruction from Valerian, I gradually gained confidence and understanding. The instruction style was supportive, detailed, and encouraging, which matched my learning style very well. Even though the course was intense and sometimes stressful, the class atmosphere felt warm and positive throughout the week. I would recommend this course to anyone serious about developing professional sensory skills in coffee. It is challenging, but incredibly rewarding. I visited Boot Coffee after reading the 'Monk of Mokha' and was instantly convinced that I need to take a few courses here. I have taken Sensory, Roasting Biz, and Q grader courses with them. Valerian, the course director, has a wealth of knowledge from his roasting businesses and happily shares it through his teachings. He cares for the progress of all students and is completely invested in our success. For the Q, Willem has been teaching the course since years and he does a great job at calming the nerves. The Q course is a stressful 6 days but both Valerian and Willem are there for you throughout the process. My business partner & I wanted to learn more about the coffee from bean to cup. or in some ways.. beyond the cup. We felt gated from industry knowledge so finding Boot Coffee was a dream come true. When an exercise feels difficult, we’ll figure out where you’re getting stuck and practice with a clear focus. Ask questions. Make mistakes during practice. We’ll work through them together, with plenty of coffee and a few laughs.
I draw on teaching experience spanning 16 years and my interest in sensory science and the psychology of tasting to help you sharpen your senses, manage second-guessing, and prepare for assessments. My background includes teaching SCA sensory, roasting, brewing, and barista courses, as well as developing Boot’s Start Coffee Roasting Business and Bean to Bar curricula.

Daily Breakdown of the Course
The curriculum unfolds across 6 intensive days, each focused on distinct modules and skill assessments. Every day we start at 8:30am finish ~4pm.
Day 1: Building Your Foundation. Course orientation, essential cupping principles review, and comprehensive exploration of green coffee physical evaluation (CVA Physical Assessment).
Day 2: Mapping Sensory Profiles. Thorough examination of descriptive evaluation techniques (CVA Descriptive Assessment), perspective-shifting tastings, aroma recognition training, and fundamental taste identification tests. Initial practical examination on physical assessment.
Day 3: Sharpening Sensory Precision. Triangulation challenges to enhance discrimination abilities, roasting defect analysis, and initial practical examination on aroma identification.
Day 4: Understanding Perceived Quality. Deep dive into quality perception evaluation (CVA Affective Assessment), developing the ability to score coffees from varied market viewpoints. Practical examinations covering triangulation and descriptive assessment.
Day 5: Beyond the Cup. Examination of cup-transcending attributes (heritage, certification standards) and concentrated practical testing on roasting defects, basic tastes, and affective evaluation.
Day 6: Real-World Application and Final Opportunities. Integration of all acquired competencies through authentic market scenarios (Value Discovery). Dedicated session for second examination attempts for candidates requiring them.
