SCA Sensory Skills Foundation: Build Confidence in Coffee Tasting

SCA Sensory Skills Intermediate: Develop Your Tasting and Evaluation Skills

SCA Roasting Intermediate: Three-Day Coffee Roasting Course

Learn to control your roast, repeat your results, and understand how your decisions affect flavour. This three-day SCA Roasting Intermediate course combines roasting exercises, coffee measurements, and tasting, with both practical and theory exams.

Can you repeat a good roast?

You’ll create a reference roast, record its measurements, and aim to match its colour in two more batches. Using a colour meter and tracking weight loss, density, and volume helps you judge consistency with more than a final temperature.

This exercise gives you a practical way to check your work and identify what needs adjusting in the next batch.

Connect roast profiles with flavor

If two coffees finish at the same colour, will they taste the same? You’ll compare coffees with different development times and explore how roasting choices affect fruitiness, acidity, chocolate, caramel, and nutty flavours.

You’ll also learn to read rate of rise, the speed at which bean temperature changes, and use it to understand how your roast is progressing.

Before each roast, we’ll look at the variables that influence your approach. How should moisture and density affect heat application? Why might the first batch of the day behave differently from later batches? These questions help you make better decisions when the coffee or roasting conditions change.

Evaluate green coffee through sample roasting

You’ll learn how consistent sample roasting helps you compare supplier samples and assess coffee before buying. We cover sample records, preparation, and the roasting protocols that make comparisons more useful.

Practical training and exams

Intermediate includes hands-on roasting exercises and a practical exam, alongside the theory assessment. You’ll practise recording your roasts, measuring the results, and repeating a target roast.

You can book Foundation + Intermediate, or sign up for all three SCA Roasting levels together and complete them in order.

Frequently Asked Questions

Should I take SCA Sensory Skills Foundation and Intermediate together?

Yes, we highly recommend taking Foundation and Intermediate together, especially if you’re new to sensory evaluation or want to build confidence at the cupping table. Book both courses together and save $500. Foundation gives you time to practice the basics: recognizing coffee characteristics, describing what you taste and learning the cupping process. Intermediate builds on those skills with more detailed sensory exercises and evaluation methods. Taking both courses together gives you a connected learning experience and more opportunities to practice what you’ve learned.

Will I receive an internationally recognized coffee roasting certificate?

Yes. After you pass the required assessments, you’ll earn an internationally recognized certificate from the Specialty Coffee Association (SCA) for the roasting level you’ve completed. Foundation, Intermediate, and Professional each have their own certificate within the SCA Coffee Skills Program.

Do I need a “good palate” or coffee tasting experience to take Foundation?

No. You don’t need to arrive knowing how to pick out tasting notes. Like any skill, tasting develops with practice. In Foundation, we’ll guide you through exercises that help you notice flavors and aromas, compare coffees and find words for what you experience. Bring your curiosity, and we’ll start there.

Why are sensory skills important for coffee professionals?

Every decision you make about coffee eventually ends up in someone’s cup. Knowing how to taste and evaluate your product helps you understand the results of those decisions. For a roaster, that might mean recognizing how a roast tastes before it reaches a customer. For a buyer, it could mean comparing samples with a clear purpose. For a barista, it’s being able to explain a coffee with confidence and help a customer find something they’ll enjoy. Sensory skills give you a way to connect what happens in your business with what happens in the cup.

How can sensory training help my coffee business?

Your customers taste the coffee you serve. Sensory training helps the people making decisions about that coffee understand it, too. A roaster can use tasting to evaluate roast quality. A buyer can compare samples with a structured process. A café team can build a shared language for discussing coffees with each other and with customers. At Professional level, you’ll also explore how sensory panels and consumer testing can support quality control and product development.

What is the SCA Sensory Skills course?

SCA Sensory Skills is a series of coffee tasting and evaluation courses from the Specialty Coffee Association. You’ll learn to recognize and describe coffee characteristics, participate in cuppings, and use sensory evaluation in your coffee work. The courses are offered at three levels: Foundation, Intermediate and Professional. Each level builds on the skills introduced in the previous one.

Can I take the courses in my combo on different dates?

Yes. You can take the courses in your combo across different scheduled intakes. Please email us before booking so we can arrange your dates and confirm seat availability.

What are the prerequisites for Sensory Skills Professional?

You must complete SCA Sensory Skills Intermediate before taking Professional. SCA also highly recommends Roasting Intermediate.
