This course delves into the key concepts important for those working with green coffee – from coffee buyers, roasters, exporters, and importers. We cover the foundations of growing, harvesting, processing, shipping, storage, and arrival at a roastery and impact of each on cup profile and quality. Anyone looking to explore the stages of green coffee the specialty coffee supply chain. Students will leave with a thorough understanding of core concepts of green coffee grading and cupping evaluation for quality and profile distinctions.


The Intermediate course will prepare you for complex job functions found in the green coffee profession, including:

  • An understanding of coffee botany and agronomy
  • Coffee processing methods and the qualities that result from processing
  • Defects in green coffee and in the cup
  • Variables that yield positive cupping scores and analysis
  • Core elements of a green coffee contract and how grading and quality differentiation are incorporated in contracts

Meet Your Instructor – Dan Streetman 

Dan has been working in green coffee since 2011, traveling extensively at origin, including every continent where coffee is grown. As a Q Arabica Assistant Instructor, and SCA Green Coffee Professional Certificate holder, Dan has spent years learning and teaching all the facets of green coffee, from sensory analysis to cupping to production and post-harvest processing to the C-market and green coffee contracts, all the while keeping in mind the perspectives of the many stakeholders involved in getting coffee from the tree to the cup. Dan believes that making these concepts accessible to everyone in the value stream is paramount to creating a transparent and equitable ecosystem.
